Pies, pâtés, and pastries are the noblest of foods. Their inner life is always a secret; their outer form, a sculpture. No other dishes are so well suited to surprises and culinary amusements. In her enchanting and historically enlightening little book, Charlotte Birnbaum traces the life of such delicacies through diverse cultures and traditions. Here, wondrous anecdotes of noblemen and farmers alike are woven together, each accompanied by toothsome recipes. The book features illustrations by Christa Näher.

“On the Table” is a series of publications edited by Birnbaum that explore the encounter between food and art. Forthcoming titles include a new English translation of F. T. Marinetti’s 1932 The Futurist Cookbook and Birnbaum’s Bon! Bon! The Enchantment of Sweets. The series, designed by Harald Pridgar, was inaugurated with Three Banquets for a Queen (Sternberg Press, 2011), recounting the spectacular feasts that greeted Queen Christina of Sweden in Rome in 1668, and continued with The Beauty of the Fold (Sternberg Press, 2012), featuring cloth-folding virtuoso Joan Sallas and including a photo catalogue of the nine folding families. 


Charlotte Birnbaum is a writer and a culinary historian based in Stockholm and Frankfurt am Main. Since 2011, she has curated “This Dinner Is a Group Show,” an ongoing series of events involving artists and chefs who engage the legacy and future of extravagant meals. Her other books include Paulas Juwelen: Kulinarische Streifzüge durch das Jahr (Walther König, 2013) and The Journey Within: Cooking with Offal (Walther König, 2010).
